Salmon `Mar Blau`

Ingredients for 2 servings:

  • 2 salmon fillets
  • 2 onions
  • ½ clove(s) garlic
  • 250 ml stock (double stock powder) or very strong homemade stock)
  • wine, white
  • Pepper, from the mill
  • herbs, fresh, mixed

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

delicious, light summer dish

Place the salmon in a baking dish. Quarter and slice the onions, add them to the dish with the salmon, and peel and finely chop the garlic. Add it to the dish. Season with pepper and sprinkle with some fresh herbs. Add the white wine, but only enough to cover the bottom of the dish. Finally, pour in the stock, making sure the salmon isn’t completely covered so it will have a bit of a crust later. Place the whole thing in the oven at 180°C for about 25 minutes. We like to serve it with just rice or baguette.
