Salmon meatballs with dip

Ingredients for 2 servings:

  • 170 g smoked salmon
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 ½ tsp mustard
  • 2 spring onions
  • ¼ bell pepper(s), red
  • 1 pinch(s) paprika powder
  • 1 egg(s)
  • 90 g breadcrumbs
  • 2 tbsp olive oil
  • 1 small garlic clove(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

For the meatballs, cut the salmon into small pieces. Dice the bell peppers. Slice the spring onions into rings. Whisk the egg. Combine all ingredients except the olive oil and breadcrumbs. Season with salt. Add the breadcrumbs to the salmon and bell pepper mixture and form into approximately 8 cm patties. Heat the oil in a pan and fry the patties for about 5 minutes per side until golden brown.
