Ingredients for 2 servings:

  • 1 can of corned beef
  • 1 large onion(s)
  • 5 large potatoes
  • 1 tbsp margarine
  • 2 tbsp cucumber juice
  • salt and pepper
  • Pickle(s)
  • Beetroot, pickled
  • Salt herring(s) (matjes or rollmops)
  • 2 eggs

Working time approx. 20 minutes; Total time approx. 20 minutes

That looks like…?! But it’s delicious!

Boil the potatoes until very soft. Meanwhile, finely chop the onions and fry in the margarine until translucent. Add the corned beef and fry. Drain the potato water, add the corned beef and onions to the potatoes and mash into a coarse mash. Season to taste with a little cucumber juice, salt, and pepper. Fry the two eggs until fried. Arrange the Labskaus on plates and serve with a fried egg, a piece of fish, a cucumber, and a few slices of beetroot. Labskaus tastes best the next day. Lightly fry it in a pan with a little fat. The Labskaus is also easy to freeze.
