Salmon mousse with avocado

Ingredients for 4 servings:

  • 1 avocado(s)
  • 150 g smoked salmon or sushi-quality salmon fillet
  • 2 tbsp sour cream or crème fraîche
  • 180 g double cream cheese, e.g. mascarpone
  • 50 g hard cheese, grated, e.g. Sbrinz, Parmesan, Grana Padano
  • some dill, finely chopped, to taste
  • some lemon juice
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Set some salmon aside for decoration, if desired. Chop the rest into small pieces and blend finely with the sour cream. Add the cheese, dill, and cream cheese, and season with salt and pepper to taste. The mousse can be refrigerated until ready to serve. To serve, just before serving, slice the avocado lengthwise and remove the stone. Carefully remove the flesh from the skin, cut into long strips, and drizzle with lemon juice. Arrange the mousse attractively on plates, using a serving ring or piping set, for example. Decorate beautifully with the avocado strips and the reserved salmon. Serve with toast, for example, cut into 4 triangles.
