Avocado-Mango Salad

Ingredients for 5 servings:

  • 200 g arugula
  • 1 avocado(s)
  • 1 mango(s)
  • 200 g shepherd’s cheese
  • 200 g cocktail tomatoes
  • 100 g Parmesan
  • 50 g cashew nuts
  • 4 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and drain the arugula and cherry tomatoes. Halve the avocado, remove the pit, and scoop out the flesh from the skin with a spoon. Peel the mango, remove the pit, and dice it. Drain the brine from the feta cheese and dice the cheese. Cut the Parmesan into small strips. Whisk the olive oil with apple cider vinegar and season with salt and pepper. Place the arugula and tomatoes in a bowl and pour over the vinaigrette. Prepare 5 plates or bowls and layer the lettuce, avocado, mango, and feta cheese using a serving ring.
