Salmon on a bed of vegetables

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 500 g zucchini
  • 800 g salmon, frozen
  • 2 packs of herbs, frozen
  • butter
  • lemon juice
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the frozen salmon from its cold packaging and let it thaw in a warm kitchen. Drizzle with lemon juice. In the meantime, clean or wash the carrots and zucchini and slice them thinly. Sauté the whole thing in butter with herbs (e.g., Italian). Season with salt, pepper, and a little sugar. Place the vegetables in a baking dish and top with the cold salmon. Now it’s time to use the oven. Place the dish in the preheated oven and let it sizzle on the middle rack at 200°C for about 30 minutes. Serve with a delicious baguette and a cold white wine.
