Salmon on creamy pepper and spinach sauce

Ingredients for 2 servings:

  • 2 salmon fillets
  • salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves, squeezed or chopped
  • 200 g bell pepper(s), grilled
  • 250 g leaf spinach
  • 200 ml cream
  • 150 g Parmesan, grated
  • ¼ tsp paprika powder
  • 1 handful of parsley

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Grilled peppers can be bought ready-made in a jar or easily prepared at home. Place the peppers on a lightly oiled baking sheet and cook for about 20 minutes at 160°C. Then turn and cook for another 20 minutes. Season the salmon with pepper and salt. Heat the oil in a pan and cook the salmon for 5 minutes on each side. Remove from the pan. Add the butter and garlic to the same pan. Cook for 1 minute, add the roasted peppers and cook for another 2 minutes. Add the spinach. Reduce the heat and add the cream, Parmesan cheese, paprika, salt, and pepper. Stir and bring to a boil. Return the salmon to the pan and pour the sauce over each fillet. Serve over pasta, rice, or steamed vegetables.
