Ingredients for 2 servings:
- 2 salmon fillets
- 1 tbsp olive oil
- 2 tbsp butter
- 1 garlic clove(s)
- 1 small onion(s), diced
- 150 ml white wine
- 80 g tomatoes, dried, cut into strips
- 250 ml cream
- 1 tsp sweet paprika powder
- 1 pinch of chili powder
- 100 g spinach, fresh
- 50 g Parmesan
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Season the salmon with salt and pepper, sear briefly on both sides, and remove from the pan. Add the butter to the pan, lightly brown the onions, add the garlic and sun-dried tomatoes, and fry. Deglaze with white wine, reduce the heat, and add the cream. Reduce the heat and add the spinach, covering the pan and letting it wilt. Add the Parmesan cheese and season with pepper, salt, and chili. Return the salmon to the pan and cook for another minute. Serve with rice or fresh baguette.
