Salmon spaghetti

Ingredients for 4 servings:

  • 500 g spaghetti or other pasta of your choice
  • 250 g smoked salmon or salmon fillet
  • 2 shallots
  • 250 ml white wine, well chilled, a little more or less according to taste
  • 1 kg tomatoes, pureed
  • 200 g crème fraîche
  • 200 g cream
  • 2 tsp broth
  • salt and pepper
  • butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cook the pasta according to the package instructions. Finely chop the shallots and sauté in the butter. Also finely chop the salmon and sauté. Deglaze with the cold wine and reduce. Add more wine if necessary. Now add the passata, season with salt and pepper, and season with the broth. Finish with the crème fraîche, pour in a dash of cream, and simmer gently for a few minutes. Finally, serve with the pasta. Very simple and delicious, best served with homemade tagliatelle.
