Salmon steak on a bed of vegetables

Ingredients for 4 servings:

  • 1 garlic clove(s)
  • some olive oil
  • 1 can tomato(s), chunky, 400 g
  • 1 tsp sugar
  • basil
  • salt and pepper
  • 1 onion(s)
  • 1 red bell pepper(s)
  • 4 m.-large zucchini
  • 4 salmon steaks
  • lemon juice
  • 100 g Parmesan
  • 1 cup sour cream

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

can also be prepared with other fish or meat

Sauté the garlic in a little olive oil, add the tomatoes, sugar, and a little salt. Cook the tomatoes for about 20 minutes. Add the basil leaves at the end. Dice the onion and bell pepper, and slice the zucchini. Sauté everything together in a little olive oil and season with salt. Place the vegetables in a roasting pan and spread half of the tomato sauce over them. Sear the salmon steaks on all sides in a pan, drizzle with a little lemon juice, season with salt and pepper, and place on the tomato sauce. Spread the remaining tomato sauce over the salmon steaks. Mix the Parmesan cheese with the sour cream and pour over the salmon steaks. Bake in a preheated oven at 200°C for about 20 minutes.
