Salmon with grapefruit and avocado

Ingredients for 4 servings:

  • 2 large avocados, ripe
  • 2 grapefruits
  • 4 salmon fillets (150 g each)
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tbsp oil for frying
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

In a bowl, combine lemon juice, olive oil, salt, and pepper to make a dressing. Halve the avocados and remove the stones. Peel and dice them, and add them to the dressing. Fillet and slice the grapefruit. Add the juice and the grapefruit to the avocados and the dressing. Let it sit for about 10 minutes. Pan-fry the salmon (this is especially delicious if you get skin-on salmon). Arrange the salmon on plates and drizzle with the grapefruit and avocado along with the dressing.
