Salmon with mustard-dill cream sauce

Ingredients for 2 servings:

  • 2 salmon fillets
  • ½ lemon(s), the juice
  • 2 tbsp mustard, medium hot
  • 1 bunch of dill
  • ¼ onion(s)
  • 1 ½ cups cream
  • Salt and pepper from the mill
  • 1 tsp sugar
  • 2 dashes Worcestershire sauce
  • Olive oil for frying

Season the salmon with salt and pepper and rub it with dill and mustard. Fry it in a pan with oil. Finely chop the onion and fry it in a little olive oil along with about the same amount of dill. Don’t overcook it, or it will become bitter! Add 2 tablespoons of mustard and heat until creamy. Add 1.5 cups of cream and season with salt, pepper, sugar, and a squeeze of lemon juice. Optionally, you can add a little Worcestershire sauce for a pleasantly sweet flavor, similar to that found in Scandinavian cuisine. Serve the salmon with the sauce; I think it goes really well with rice.
