Ingredients for 3 servings:
- 1 salmon – side, without bones and skin, approx. 500 g
- 4 shallots
- 4 tbsp vinegar (tarragon)
- 2 tbsp vermouth, e.g. Noilly Prat
- 250 ml sweet cream
- 1 bunch tarragon
- Sea salt
- pepper,
- butter
Instructions

Finely chop the shallots. Tear the tarragon leaves into small pieces. Sauté the shallots in butter, then deglaze with vinegar and Noilly Prat. Add the cream and simmer for 3-4 minutes. Place the salmon in a buttered baking dish, sprinkle with sea salt, ground pepper, and fresh tarragon. Pour the sauce over the salmon and bake in a preheated oven at 180°C for about 15 minutes. Serve with baguette or mashed potatoes.
