Salsiccia with Mashed Potatoes and Olive Oil and Balsamic Onions

- 2 Salsiccia Mettwurst
- 2 size Floury potatoes
- 2 size Onions
- 2 El Butter
- 2 El Balsamic vinegar old
- 1 tbsp Sugar brown
- 1 El Clarified butter
- Salt and pepper
- 1 shot Noilly Prat
- Nutmeg
- Extra virgin olive oil
- Boil the potatoes with salt until soft.
- In the meantime, cut the onions into slices. Add the clarified butter with the sugar to the pan and let it caramelize. Now add the onions and deglaze with the wine
- Add some water to the seasoning and cook covered until soft. Now add the balsamic vinegar and briefly sauté a tablespoon of butter and season to taste.
- Drain the potatoes, let them evaporate briefly and mash them, add a tablespoon of soft butter, nutmeg, salt, pepper and enough olive oil until the desired consistency is achieved.
- Place the salsiccia on the grill and cook through. Season everything again to taste and serve.
