Salsiccia with Mashed Potatoes and Olive Oil and Balsamic Onions

Ingredients
 

  • 2 Salsiccia Mettwurst
  • 2 large Floury potatoes
  • 2 large Onions
  • 2 tbsp Butter
  • 2 tbsp Balsamic vinegar old
  • 1 tbsp Brown sugar
  • 1 tbsp Clarified butter
  • Salt and pepper
  • 1 shot Noilly Prat
  • Nutmeg
  • Extra virgin olive oil

Instructions
 

  • Boil the potatoes with salt until soft.
  • In the meantime, cut the onions into slices. Add the clarified butter with the sugar to the pan and let it caramelize. Now add the onions and deglaze with the wine
  • Add some water to the seasoning and cook covered until soft. Now add the balsamic vinegar and briefly sauté a tablespoon of butter and season to taste.
  • Drain the potatoes, let them evaporate briefly and mash them, add a tablespoon of soft butter, nutmeg, salt, pepper and enough olive oil until the desired consistency is achieved.
  • Place the salsiccia on the grill and cook through. Season everything again to taste and serve.
