Ingredients for 3 servings:

  • 1 jar salsify
  • 2 tbsp butter or margarine
  • 2 tbsp flour
  • 100 ml low-fat milk
  • 1 tsp lemon juice
  • salt and pepper
  • 1 handful of parsley, chopped or herbs, frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Natural and simple

Melt the butter in a saucepan, then stir in the flour and sauté gently. Pour in the milk, stirring constantly. Add 2/3 of the liquid from the jar of salsify to the roux, stirring continuously. Bring to a boil and simmer for 3 minutes; this will reduce the flour taste. Season with lemon juice, salt, and pepper. Add the parsley or frozen herbs. Drain the remaining liquid from the jar and add the salsify pieces to the sauce. The sauce should no longer be boiling, but just warm. Allow the vegetables to warm through.
