Salt-crusted roast

Ingredients for 6 servings:

  • 1,500 g roast pork (roast ham with rind)
  • 1,500 g salt, coarse
  • Mustard, medium hot
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 45 minutes

Score the rind of the roast in a diamond shape with a sharp knife. Place a piece of baking paper on a baking sheet and spread all the salt on it. Generously brush the roast with mustard and season with pepper. Place the roast on the bed of salt and roast at 200°C for approximately 2 to 2.5 hours. This is a very simple recipe because once the roast is in the oven, you don’t have to worry about it anymore. No need to baste or anything like that. Coleslaw goes perfectly with it.
