Saltimbocca of scallops

Ingredients for 6 servings:

  • 12 scallop(s), cleaned
  • 6 slices of Parma ham
  • 20 sage leaves
  • 3 tbsp olive oil
  • 60 g butter
  • lemon juice
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Preheat oven to 100°C (top/bottom heat). Rinse scallops with cold water and pat dry, then season with pepper, lemon juice, and a little salt. Wash and pat sage leaves dry. Cut ham into 12 equal strips, top each with 1 sage leaf and 1 scallop. Roll these strips in the ham, securing each with a wooden skewer if desired. Heat oil in a pan. Fry saltimbocca until golden brown all over. Place on a wire rack and keep warm in a warm oven. Pour oil from the pan, heat butter in it, and briefly froth the remaining sage leaves, then season with salt and pepper. Plate saltimbocca, pour sage butter over it, and serve.
