Ingredients for 4 servings:

  • 1 chicken, ready to cook, cut into pieces (approx. 1.2 kg)
  • 1 tbsp butter
  • 2 tbsp olive oil
  • 250 ml white wine
  • 80 g Parma ham, finely chopped
  • 2 tsp sage, fresh, finely chopped
  • Salt and pepper, freshly ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Braised chicken with Parma ham and sage in white wine sauce

Heat the butter and oil in a large casserole dish and fry the chicken pieces until golden brown. Drain off some of the fat. Deglaze with the wine and bring to a boil. Add the ham and sage, season with salt and pepper, and simmer on low heat with the lid closed for about 45 minutes. Add water or stock, if desired. Season to taste and serve. Serve with potatoes or simply fresh, crusty white bread.
