Salzburger Nockerl

Ingredients for 4 servings:

  • 50 g butter
  • 4 eggs, separated
  • 50 g sugar
  • 1 tbsp flour
  • 200 ml milk
  • 1 packet of vanilla sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 250°C. Beat butter and egg yolks until fluffy. Add flour and mix. In a second bowl, beat egg whites and sugar until very stiff peaks form. Add the butter mixture and stir briefly, but do not mix completely. Bring the milk and vanilla sugar to a boil in a saucepan and add the mixture in three large portions. Then place in the hot oven. Bake for about 5 minutes, until the peaks of the mixture turn dark brown. Serve immediately, adding a few spoonfuls of hot vanilla milk to each portion. The Salzburger Nockerl should still be creamy on the inside.
