Ingredients for 3 servings:
- 5 egg whites
- 3 egg yolks
- 30 g sugar
- 1 packet of vanilla sugar
- 1 tsp lemon juice
- 1 tsp, heaped lemon zest, grated
- 25 g flour
- 30 g butter, soft
- 10 g sugar, for the casserole dish
- 4 tbsp milk, hot
- 1 tsp rum, can also be omitted
- powdered sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Preheat oven to 200 to 220 degrees Celsius. Beat egg whites until peaks form, then gradually add sugar, vanilla sugar, and lemon juice, beating the egg whites until stiff peaks form. In a second bowl, mix the flour, egg yolks, and lemon zest until stiff peaks form, then carefully fold this into the iced egg whites. Grease the baking pan with butter, including the edges. Cover the bottom of the pan thinly with sugar. Mix the hot milk and rum and spread evenly over the bottom of the pan. Using a spatula, pour the foam mixture into the baking pan in three portions in a pyramid shape. Bake in the oven for 12-17 minutes until golden brown. Dust with powdered sugar and serve immediately.
