Ingredients for 10 servings:

  • 100 g marzipan
  • 300 g butter
  • 120 g powdered sugar
  • vanilla sugar
  • Lemon(s) peel
  • 2 eggs, of which the egg white
  • 350 g flour
  • 200 g jam (apricot jam)
  • 1 cup cake icing, chocolate

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cream the butter until fluffy, then stir in the finely chopped marzipan, sugar, egg whites, vanilla sugar, and lemon zest. Finally, stir in the flour. Transfer the mixture to a piping bag fitted with a serrated nozzle. Pipe “shell-like” dots (not too large—two should be joined together to form a cookie after baking!). Bake at 160°C until light golden brown. Let cool. Place two together with jam (any other jam can be used, of course), dip halfway into the chocolate glaze, and let dry. Excellent Christmas cookies! Even those who don’t normally like marzipan should give this a try.
