The “grillage”, the minced meat in tomato sauce
- Sear the meat in a hot pan. Add tomato paste, briefly toast everything together.
- Deglaze with approx. 200 ml of water, add the soup cubes / beef stock and simmer on a low level for approx. 30 minutes while reducing.
- Mix in the herbs, season with salt and pepper.
The sandwich
- Halve the baguette, cut lengthways (do not cut through). Top each with mince, onion rings, tomato slices and cheese.
- If desired, add a sandwich sauce.
tip
- Prepare enough napkins!
Sandwich sauce
- As you can see in the photos, I used my “tarragon sauce”, but fresh yoghurt-garlic or herb sauces also go perfectly with this dish.
