Sweet Onion and Mustard Sauce tarragon Sauce

  • 1 Pc. Onion red
  • 1 Pc. Clove of garlic
  • 1 shot Apple Cider Vinegar
  • 2 tsp Estragon mustard
  • 2 tsp Sugar
  • Water
  • Salt
  • Pepper

  1. My tarragon sauce combines flavors of mayonnaise, mustard and sweet oninon sauce in a new sauce creation. Ideal with / in sandwiches, pan-fried foods, grilling, fondue, raclette, etc.

preparation

  1. Finely chop a large red onion with a food processor, then press the onion water through a fine sieve and set aside.
  2. Roast the onion in hot oil, deglaze with a dash of vinegar.
  3. Stir in the sugar and tarragon, press in the garlic, then add a little water and cook the onion mixture on a low level for approx. 30 minutes until soft.
  4. Let the mixture cool down and press it through a fine sieve. Add the previously squeezed onion water and mix everything well.
  5. Season to taste with salt and pepper.
