Sweet Onion and Mustard Sauce tarragon Sauce

- 1 Pc. Onion red
- 1 Pc. Clove of garlic
- 1 shot Apple Cider Vinegar
- 2 tsp Estragon mustard
- 2 tsp Sugar
- Water
- Salt
- Pepper

- My tarragon sauce combines flavors of mayonnaise, mustard and sweet oninon sauce in a new sauce creation. Ideal with / in sandwiches, pan-fried foods, grilling, fondue, raclette, etc.
preparation
- Finely chop a large red onion with a food processor, then press the onion water through a fine sieve and set aside.
- Roast the onion in hot oil, deglaze with a dash of vinegar.
- Stir in the sugar and tarragon, press in the garlic, then add a little water and cook the onion mixture on a low level for approx. 30 minutes until soft.
- Let the mixture cool down and press it through a fine sieve. Add the previously squeezed onion water and mix everything well.
- Season to taste with salt and pepper.
