Sandwich with fried mushrooms

Ingredients for 2 servings:

  • 1 small baguette(s) or ciabatta, vegan
  • 6 large mushrooms (field mushrooms)
  • 1 onion(s)
  • 2 tbsp soy sauce
  • 1 handful of mixed salad
  • 2 tbsp, heaped mustard, coarse-grained
  • salt and pepper
  • e.g. garlic oil
  • n. B. white wine vinegar, vegan
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Halve the bread, slice it open, and briefly bake it in the oven or toaster until crispy. Wash the lettuce and spin dry. Peel the onions and slice them into rings. Clean the mushrooms and fry them in a little oil in a pan or, even better, in a contact grill. Season the mushrooms with salt and pepper and deglaze with the soy sauce. Brush the undersides of the bread with the mustard and drizzle a little garlic oil on the tops. Spread the lettuce on both undersides and top with onion rings. If desired, drizzle a little vinegar on the lettuce or spray it with a vinegar spray. Grind over some salt and pepper. Place three mushrooms on each half and fold the other half of the bread on top. Enjoy immediately.
