Ingredients for 8 servings:
- 250 g butter
- 150 g spring onions
- 2 tbsp lemon juice
- 2 tbsp lemon zest
- salt and pepper

delicious with grilled food
Let the butter soften at room temperature and then cream with a hand mixer until fluffy. Wash the spring onions and slice them into very fine rings. Stir the spring onions into the butter along with the lemon zest and lemon juice, and season with salt and pepper. Place the butter on a sheet of cling film and roll into a log. Let it set in the refrigerator, then cut into portions and freeze if desired.
