Sandwich with tomato and goat cheese filling

Ingredients for 2 servings:

  • 4 slices of white bread (whole wheat sandwich)
  • 10 g butter
  • 50 g shallot(s)
  • 100 g tomatoes
  • 30 g spring onions
  • n. B. Sambal Oelek
  • n. B. Salt and pepper, from the mill
  • 50 g goat cheese, softer, Camembert also works

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Peel and finely dice the shallots, quarter, deseed, and finely dice the tomatoes, and slice the spring onions into rings. Sauté the shallots in the butter, add the diced tomatoes and spring onions, and heat everything briefly, seasoning with salt, pepper, and a little sambal oelek. Finally, add the soft goat cheese and stir until it has combined with the other ingredients. Let cool slightly. Spread the mixture onto two whole-wheat sandwich slices. If any liquid has separated, you can also add it to the slices of toast for an even more moist texture. Cover with the other two slices of toast and brown in the sandwich maker for 5 minutes. Tastes best served warm.
