Ingredients for 6 servings:
- 4 chicken breast fillets
- 300 g macaroni
- 60 ml olive oil
- 1 onion(s), chopped
- 1 carrot(s), diced
- 3 slices of breakfast bacon
- 2 zucchini, diced
- 450 ml soup (tomato soup)
- 90 g sour cream
- 180 g Gouda, grated
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Preheat the oven to 180°C. Brown the diced meat in oil over high heat; it should not be cooked through, but should have taken on some color. Drain on kitchen paper. Cook the macaroni al dente. Fry the onion, carrot, and bacon in the pan for 10 minutes. Add the zucchini and tomato soup, bring to a boil, and simmer for 5 minutes. Mix the macaroni with the meat, tomato sauce, and sour cream, season with salt and pepper. Transfer to a baking dish and sprinkle with cheese. Bake for 20 minutes.
