Ingredients for 2 servings:

  • 500 g sardines, whole
  • 20 cocktail tomatoes, halved or quartered
  • 200 ml water
  • ½ cup(s) vinegar
  • ½ bunch basil, washed and finely chopped
  • some oregano, if desired
  • 3 slices of bread, including the crumbs (white or brown bread, as desired)
  • some salt
  • some pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

quick and easy and tastes like vacation!

Cut off the head and tail fin of the sardines, slit them open, and gut them. Rinse the sardines in cold water and place them in a pan. Top the sardines with the breadcrumbs, herbs, and tomatoes. Add the water and vinegar and season with salt and pepper. Cook over medium heat for about 8-10 minutes, until the liquid has evaporated. It may not look as good, but it tastes even better!
