Squid in tomato sauce

Ingredients for 4 servings:

  • 4 large squid tubes
  • 8 beefsteak tomatoes
  • 4 cloves garlic
  • 100 ml olive oil
  • 1 tsp sea salt
  • Pepper, from the mill
  • 1 tbsp lemon juice
  • 3 tbsp parsley, finely chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the squid tubes open on the side, make diamond-shaped incisions on the inside approximately 1 cm apart, and cut into strips approximately 8 cm long and 3 cm wide. Toss with olive oil, finely chopped garlic, sea salt, pepper, lemon juice, and parsley and marinate. Meanwhile, peel, deseed, and finely dice the tomatoes. Heat a large pan to high heat, add the drained squid strips. When the strips have curled, add the remaining marinade and simmer for about 5 minutes. Now add the diced tomatoes, reduce the heat slightly, cover, and cook for about 15 minutes. Serve with ciabatta or spaghettini (in this case, cut the squid into smaller, narrower strips and use more tomatoes if desired; the cooking time will increase accordingly).
