Sardine schnitzel

Ingredients for 4 servings:

  • 500 g sardines, fresh
  • 200 g breadcrumbs
  • 100 g Parmesan, grated
  • n. B. vinegar, white
  • 2 eggs
  • e.g. olive oil for frying
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Wash and bone the sardines, and marinate them in white vinegar for at least half an hour. Pour enough vinegar over the sardines to cover them. Beat the eggs with a pinch of salt in a bowl and add the dried sardines. Mix the breadcrumbs and Parmesan cheese evenly with a little salt and pepper, then coat the sardines in breadcrumbs. Deep-fry the sardines in hot olive oil and serve warm.
