Robert's Beer Turkey Schnitzel

Ingredients for 4 servings:

  • 4 turkey schnitzels
  • 4 tbsp olive oil
  • 3 tbsp beer, light
  • 2 garlic cloves, peeled and squeezed
  • 1 tsp mustard, medium hot
  • 1 tsp, leveled herb salt
  • 6 stalks thyme, plucked
  • 6 stalks parsley, picked and finely chopped
  • ½ tsp mustard seeds
  • ½ tsp Café de Paris (spice)
  • 1 tsp sweet paprika powder
  • ½ tsp white pepper, freshly ground
  • ½ tsp black pepper, freshly ground

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 6 minutes; Total time approx. 4 hours 26 minutes

For the marinade, combine all ingredients in a bowl large enough to hold the schnitzels and whisk well. Wash the schnitzels, pat dry, and pound if necessary. Then toss them well in the marinade and let them sit in the bowl. Cover and refrigerate for at least 4 hours. Place the schnitzels in a heated pan without adding oil or on the prepared grill and cook well, turning and cooking again. Serve with a salad, baguette, or crispy sage potatoes.
