Sauces: Garlic Mayonnaise

The perfect sauces: garlic mayonnaise recipe with a picture and simple step-by-step instructions.

The base

  • 50 ml Room temperature milk
  • Neutral oil

The flavor carriers

  • 1 tablespoon Extra virgin olive oil
  • 0,5 teaspoon Medium hot mustard
  • 1 Knife point Pepper
  • 1 Knife point Salt
  • 0,5 teaspoon Sugar
  • 2 Splash Freshly squeezed lemon juice
  • 2 piece Garlic cloves

The base

  1. This cream does not contain any eggs at all, but has the same consistency as mayonnaise and can be mixed with many ingredients to make a wide variety of sauces.
  2. Use the hand blender to froth the milk at room temperature. Now slowly add the neutral oil (here rapeseed oil), which is also at room temperature, slowly splashing in and continuing to foam. The mass heats up slowly and becomes thicker with each addition of oil. As soon as the desired consistency has been reached – therefore no exact quantity is given – stir in the desired flavor carriers and let them steep a little.

  1. Add olive oil, mustard, pepper, salt, sugar and lemon juice and mix well. Peel the garlic cloves, dice them very small and add to the cream. Let something steep at room temperature.
