Ingredients for 1 servings:
- 500 g sauerkraut, mild
- 80 g celery, finely diced
- 150 g bell pepper(s), green, finely diced
- 100 g onion(s), finely diced
- 1 chili pepper(s), green, medium hot, finely diced
- 180 ml white wine vinegar
- 200 g sugar

Bring the finely diced vegetables to a boil with sugar, vinegar, and sauerkraut and simmer for about 30 minutes, until the liquid has largely reduced. Stir occasionally. While still hot, pour the relish into screw-top jars. It will keep unopened for up to a year and tastes fantastic with grilled food or cheese.
