Sauerkraut vegetables

Ingredients for 4 servings:

  • 2 tbsp oil
  • 1 m.-sized onion(s)
  • 300 g sauerkraut, drained
  • 300 g carrot(s), grated
  • 3 bell peppers, two red, one green
  • 2 tsp, leveled chili flakes
  • 1 tbsp tomato paste
  • 1 honey
  • 100 g cream
  • 100 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Spicy sweet side dish or small snack

Dice the onion and sauté in oil until translucent. Add the drained sauerkraut and grated carrots. Add a little salt and let the water simmer. While the water is cooking, wash and deseed the bell peppers. Roughly dice the red peppers and finely dice the green peppers. Add them to the pan. Mix together the cream, vegetable stock, tomato paste, honey, and chili flakes. Add the mixture to the pan once all the liquid has evaporated. Let it reduce, seasoning with salt and pepper if desired.
