Ingredients for 1 servings:

  • 300 g flour
  • 200 g sugar
  • 200 g butter
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 egg yolk
  • 4 egg whites
  • 150 g sugar
  • 200 g almonds, ground

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 15 minutes

Dough: Mix together the flour, baking powder, 200g sugar, butter, 1 teaspoon cinnamon, and the egg yolk, then chill for at least 30 minutes. Roll out the fairly firm and crumbly dough evenly on a baking sheet and lightly scrape it with a fork. Beat the egg whites with 150g sugar until stiff peaks form, then fold in the almonds. Pour the mixture onto the rolled out dough and spread it evenly. Bake on the bottom rack at 150°C (convection/fan oven) for 20 minutes, until the top is lightly browned. Remove from the oven and, while still hot, cut into small rectangles or diamonds with a thin knife. If desired, you can dip one end in chocolate coating. These Laibla (cookies) are very quick and easy to make, and everyone who tries them will love them.
