Saumagen meatballs

Ingredients for 4 servings:

  • 650 g minced meat, mixed
  • 200 g French fries, frozen
  • 60 g onion(s)
  • 45 g breadcrumbs
  • 45 g leek
  • 2 eggs
  • 18 g salt
  • 3 g black pepper
  • 3 g marjoram, shredded
  • 2 g nutmeg
  • ½ g coriander powder
  • 1 g garlic granules

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes

Mix the minced meat with all the seasonings. Cut the slightly thawed fries into 0.5 cm cubes (these are easier to incorporate without getting mushy when mixing). Alternatively, dice the potatoes and pre-cook them in salted water. Finely dice the onions and leeks, add the breadcrumbs and beaten eggs. Then mix everything until smooth and let stand for 30 minutes so the breadcrumbs can swell. Form the mixture into roughly even-sized meatballs and flatten them with wet hands. Place these meatballs in hot fat or oil and press them into shape with a ladle. Fry for about 25 minutes, depending on the thickness of the meatballs. Mashed potatoes and sauerkraut are practically a must!
