Sausage goulash, simple

Ingredients for 4 servings:

  • 500 g meat sausage, simple
  • 500 g onion(s)
  • 500 g potatoes
  • 2 cloves garlic
  • 50 g bacon
  • 1 spice(s) – bouquet (e.g. rosemary, marjoram, bay leaf, savory, caraway)
  • 1 tbsp paprika powder, rose hot
  • 3 tbsp tomato paste
  • ½ liter meat broth or vegetable broth
  • salt and pepper
  • Cream or sour cream as desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the sausage and peeled potatoes into slightly larger cubes, and slice the peeled onions. Finely dice the bacon, add just enough water to cover in a pot, bring the water to a boil, then fry the bacon, remove the cubes, and set aside. Briefly sauté the paprika in the bacon fat (careful, it will turn black very quickly, which will make it bitter!), add the onions, and stir well. Cook the onions until translucent, stirring continuously, then add the potatoes and broth. Add the spice mix and bring to a boil. Now stir in the sausage and tomato paste, adding broth and bacon cubes if desired, and simmer for at least half an hour (the longer the better). Season to taste with cream or sour cream before serving.
