Ingredients for 2 servings:

  • 2 knackwurst
  • 2 tomatoes
  • 1 bell pepper(s)
  • 1 spring onion(s)
  • 1 onion(s)
  • 10 sugar snap peas
  • 1 tbsp tomato paste
  • 200 ml vegetable broth or beef stock
  • 1 tbsp vegetable mix (corn mix) from the can
  • 1 tbsp, heaped Ajvar, hot
  • 1 tbsp paprika powder, hot
  • e.g. chili flakes
  • 1 tbsp oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cut the sausages into thin slices. Wash and deseed the bell peppers, then cut into approximately 2 cm pieces. Peel and eighth the onion. Trim and finely chop the spring onion. Cut the tomatoes into small pieces. Heat a little oil in a pan, add the sausage slices, and fry well. Turn and stir. Add the tomatoes, onion, spring onion, and bell peppers, fry briefly, stir in the tomato paste, and deglaze with the vegetable or beef broth. Add the snow peas and corn. Add ajvar and paprika to taste. Season with chili flakes. Note: I didn’t need salt and pepper for this, but that’s a matter of taste. The dish is hearty enough.
