Sausage tortellini

Ingredients for 2 servings:

  • 250 g tortellini
  • 150 g sausage with fennel or garlic
  • 1 bell pepper(s), yellow
  • 10 g pine nuts
  • 50 g cherry tomatoes
  • 1.6 liters of vegetable broth
  • 1 bunch of basil
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the tortellini in 1.5 liters of vegetable stock until al dente. Meanwhile, cut the sausage into large pieces and sauté in a pan without any additional fat. Dice the bell peppers and add them to the sausage along with the pine nuts. Halve the cherry tomatoes and sauté them in the same pan. Deglaze with the remaining 100 ml of vegetable stock. Drain the cooked tortellini in a sieve and then add them directly to the sauce. Season with salt and pepper. Serve hot from the pan, sprinkled with fresh basil.
