Ingredients for 4 servings:
- 2 tbsp oil
- 2 chicken breast fillets, cut into thin strips
- 3 cloves garlic, finely chopped
- 50 g diced ham
- 400 g leaf spinach, frozen or fresh
- 600 g pastry cream
- 250 g pasta, e.g. fusilli
- 150 g Parmesan
- 15 g parsley, frozen or fresh
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Cook the pasta in a pot until “al dente,” then drain and set aside. Heat the oil in a large pot. Add the chicken breast strips to the pot and fry until just cooked through. Briefly sauté the garlic and ham, then add the spinach and a little salt and pepper, and sauté until the spinach has wilted. (Frozen spinach will not wilt, of course.) Add the cream and bring to a boil while stirring. Add the cooked pasta, cheese, and parsley, and stir until evenly coated. Season with salt and pepper. We, and especially the kids, love this pasta.
