Sausage with tortellini and spinach

Ingredients for 2 servings:

  • 250 g tortellini from the refrigerated section
  • 300 g sausage
  • 1 onion(s)
  • 1 garlic clove(s)
  • some olive oil
  • 400 g tomatoes, chopped
  • 200 ml broth
  • 2 tbsp mascarpone
  • 2 handfuls of spinach
  • salt and pepper
  • Sugar
  • Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

in tomato sauce

Cook the tortellini according to the package instructions. Drain in a sieve. Sort the spinach leaves and remove any coarse stems. Wash thoroughly, drain, and cut into strips. Heat the olive oil in a pan. Squeeze the sausage skins out of the skins, form into dumplings, sear, remove, and set aside. Sauté the peeled and finely chopped onion and the very finely chopped garlic clove in the pan. Add the tomatoes and stock, cover, and simmer over low heat for about 10 minutes. Fold in the mascarpone, tortellini, sausage, and spinach, simmer briefly, and season with salt, pepper, and sugar. Serve sprinkled with grated Parmesan cheese.
