Ingredients for 1 servings:
- 200 g flour
- 1 tsp baking powder
- ½ tsp chili powder
- ½ tsp salt
- 50 g butter, soft
- 150 g cheese (Edam or Old Amsterdam), grated
- 25 g sunflower seeds
- 60 g apple sauce, or a finely grated fresh apple
- 2 tbsp milk

You can use wheat or spelt flour, from refined to wholemeal, depending on your taste. Mix the flour, baking powder, salt, and chili powder, then work in the butter until a crumbly dough forms. Stir in the cheese, sunflower seeds, and applesauce or grated apple. If the dough is too dry, add 2 to 5 tablespoons of milk. You can roll out the dough (about 1 cm thick) and cut out circles with a glass, or use an ice cream scoop to form small balls and flatten them slightly. I prefer the latter option because it keeps the dough moister and makes the scones more moist. If you like, you can sprinkle the scones with some sunflower seeds. Bake at 200°C (180°C fan-assisted oven) for about 12 to 15 minutes. I like to eat the scones with butter, with salmon, with cream cheese, topped with a piece of cold cuts, or with cheese. I dip them in dips, sauces, or eat them as is. I enjoy them when I’m sad, when I’m happy, when the sun is shining, when a blizzard is raging—always.
