Ingredients for 10 servings:
- 1 onion(s), diced
- 220 g flour (or half starch, half spelt flour)
- 1 tsp baking powder
- 100 g bacon, diced
- 200 g cheese, grated (Gouda or Emmental)
- 1 egg(s)
- 50 ml oil, neutral
- 250 ml buttermilk
- ½ tsp salt
- n. B. Pfeffer
- n. B. Nutmeg
- 2 tbsp chives, in rolls
- 1 garlic clove(s)
Instructions

Using a spatula, combine the flour and baking powder with the diced onion and bacon, spices, and cheese (reserve 60g). Shake the egg, oil, and buttermilk in a Tupperware Mix-Fix or whisk in a mug and stir into the flour mixture. Pour the fairly runny mixture into muffin tins (place silicone tins on the rack before filling). Sprinkle with the remaining cheese. Bake in a preheated oven at 190°C (170°C fan-assisted oven) for about 30 minutes. This yields about 12 small muffins. They’re easy to make ahead and freeze.
