Savory pancake with spicy cheese

Ingredients for 4 servings:

  • 350 g flour
  • 4 eggs
  • 1 vegetable onion(s)
  • 250 g rocket
  • 1 bunch of chives
  • 250 g Gruyère or other spicy cheese
  • 200 g diced ham (vegetarian substitute!)
  • 2 pinches of salt
  • 200 ml oil
  • 200 ml milk

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Make a pancake batter from the flour, eggs, salt, and milk. Mix the ingredients in a bowl with a whisk. Roughly dice the onion and chives. Coarsely grate the cheese. Heat a pan with 2 tablespoons of oil and fry the onions until golden brown. Remove the onions and set aside. Fry the vegetarian ham cubes in 2 tablespoons of oil until crispy. Then remove and set aside. Heat 2 tablespoons of oil in a pan, pour some batter over them, and cook on both sides over medium heat until golden brown. Remove the pancakes from the pan and top with the toasted ingredients and chives. Sprinkle with grated cheese. Bake in a preheated oven at 200°C for 5 minutes, until the cheese has melted. Remove from the oven and scatter a few arugula leaves on top.
