Savory waffles with potatoes and pumpkin

Ingredients for 3 servings:

  • 325 g potatoes
  • 325 g pumpkin(s)
  • 1 small onion(s)
  • 1 chili pepper(s)
  • 1 tsp salt
  • 2 m.-sized eggs
  • 3 tbsp, heaped flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Peel, weigh, and finely grate the potatoes. Peel, deseed, weigh, and finely grate the pumpkin. Finely dice the onions. Halve the chili pepper, remove the seeds and skin, and finely dice. Place the ingredients in a bowl. Add the salt, potato flour, and egg, mix well, and let stand for 10 minutes. Bake the batter in batches in a hot, lightly greased waffle iron. Serve the waffles hot with a dip and a salad. This will serve 2-3 people, depending on your appetite. Tip: Adjust the chili pepper to taste and spice level, or season with pepper and nutmeg instead of chili, for example. If you like, add a handful of grated cheese or diced ham to the batter. The baking time is approximate and depends on the waffle iron.
