Ingredients for 4 servings:
- 1 kg potatoes, quartered, with skin
- 1 thick zucchini, sliced
- 1 large bell pepper(s), color of your choice, cut into strips
- 1 large onion(s), quartered
- 500 g mushrooms, fresh, coarsely sliced
- some stalks of rosemary, sage, thyme, oregano
- salt and pepper
- Garlic clove(s), amount to taste
- olive oil

delicious with grilled food
Place the vegetables, mushrooms, and potatoes in an ovenproof pan. Sprinkle the chopped herbs (preferably fresh) and the minced garlic over the top. Season with salt and pepper and drizzle with a generous portion of olive oil. Mix together and bake in the oven at 200°C for about 30 minutes, turning once or twice. Once the potatoes are tender, serve. The vegetables are delicious on their own, but also go well with grilled meat.
