Savoy cabbage in coconut milk

Ingredients for 4 servings:

  • 1 savoy cabbage
  • 1 onion(s), diced
  • 2 clove(s) garlic, chopped
  • 800 ml coconut milk
  • e.g. diced tofu
  • e.g. salt and pepper
  • 200 g cashew nuts

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the tofu, onion, garlic, and cashews in a large pan or wok. Trim and finely chop the savoy cabbage, and saute it as well. Add the coconut milk and simmer over low heat until the cabbage is tender. Season with salt and pepper. Serve with rice.
