Ingredients for 4 servings:
- 1 kg potatoes
- 600 g beans, green
- 2 onions
- 250 g beef fillet(s) or tartar (minced beef)
- 1 tsp olive oil
- 700 ml tomato juice
- 150 g kidney beans
- 175 g corn
- 70 g pepper, mild
- 120 g cheese, grated (light)
- salt and pepper
- chili powder
- oregano
- 1 pinch(s) of sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil the potatoes lightly in salted water (with the skin on). Allow to cool, then cut into wedges. Place the potatoes in a large casserole dish and spread them out. Finely dice the onions and fry them in a non-stick pan with olive oil. Add the beef fillet, which is cut into thin strips, and fry until seared. Add the onion/meat to the potatoes. Sauté the beans in the same pan and deglaze with tomato juice. Add the beans and corn. Season to taste and pour the mixture over the potatoes and meat. Arrange the peppers, sliced into rings, over the casserole and scatter the cheese on top. Bake in a preheated oven at 180°C for 45 minutes. If necessary, cover the casserole with aluminum foil halfway through baking.
