Scallop on avocado cream

Ingredients for 2 servings:

  • 1 avocado(s), ripe
  • ½ tbsp lemon juice, freshly squeezed
  • ½ clove(s) garlic, chopped
  • salt and pepper
  • 2 scallops
  • some lemon juice, freshly squeezed
  • salt and pepper
  • 1 tbsp oil (lemon oil), or olive oil
  • 1 clove(s) garlic, lightly crushed
  • 1 sprig(s) rosemary

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

A small but very fine starter

Avocado Cream: Peel the avocado and place it in a tall blender. Immediately blend it with the lemon juice until smooth (or strain it through a sieve). Season with garlic, salt, and pepper. Drizzle the scallops with lemon juice, salt, and pepper. Heat the lemon oil in a grill pan, add the garlic clove and rosemary sprig, and sear briefly. Add the scallops and sear for 2 minutes on each side. Meanwhile, arrange the avocado cream on the plates. Arrange the seared scallops on top of the avocado cream and serve immediately.
