- 1 scallop(s)
- 1 tsp pesto (wild garlic pesto)
- 1 slice(s) truffle
- 1 slice(s) Parmesan
- Salt (Fleur de Sel)
- butter
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Amuse-gueule or starter for the menu
Sear the scallops in butter for about two minutes on both sides. Then place them in a scallop shell, spread with the wild garlic pesto (I prefer “Schrat’s Wild Garlic Pesto” – a recipe from CK), and top with a little fleur de sel and a thin slice each of truffle and Parmesan cheese. Bake in the oven at 180°C for 5 minutes and serve immediately.
